This smash hit bakery service from Niverville has taken over the former home of Pennyloaf Bakery, where the shelves are once again stocked with exceptional breads. Owners Maria and Chris Holbrow believe it may be the only wild yeast-based bakery in Canada, with their loaves made using a 48-hour-fermentation that makes it easier to digest compared to conventional breads. After rapidly outgrowing their home bakery they started in 2022, and faced with a demand that went well beyond the 400+ loaves they were regularly selling at the St. Norbert Farmers’ Market, the couple can now serve a larger audience in the city while including items like wild yeast pastries, pastas and cereals.
